As noted, there are certain kitchen tools that can downgrade the bacteria in a probiotic food, leaving it yeast dominant. Metal utensils and bleached cloths as covering during fermentation both have this effect. It is worthwhile to invest in some good wooden stirring spoons and a roll of unbleached cheesecloth or muslin. Paper towels are bleached, so they are not a good choice for covering the growing yogurt.
